Can you do something with less eggs. I know you want to increase the protein, but I have difficulty with eggs. I can handle 1 or 2 in a recipe but not 6. Is there a substitute ? Tofu ? I am been experimenting with aquafaba. Not sure if I could replace that many eggs.

my go-to breakfasts without eggs are chia pudding or overnight oats, I have loads of recipe options for both on my site if you want to take a look!

Bob's Red Mill makes an Egg Replacer that we've successfully used in other recipes - the egg is there to bind, so another binding agent is what you'd be looking for.

Unsweetened applesauce also works great for replacing 1-2 eggs, and there's no sweet or apple flavor imparted.

Also, sometimes I just leave eggs out all together when 1-2 are called for, and the texture may be more crumbly, but it still tastes great! Maybe try 2 eggs + a replacer for 2 (so 4 "eggs" total) and see how it turns out?

I LOVE the jalapeno cheddar biscuits. But it might be nice to have a slightly sweet version. I use swerve or allulose. But sometimes you get a sweet tooth for breaky!

The biscuits look AMAZING! I would love to see more egg free high protein baking recipes (ex. tofu frittata, etc), as I can't eat eggs.
