Happy Friday and happy bonus recipe day! If you’re a new subscriber, I send out bonus recipes here on Substack once a month and aim to develop recipes that are unique, seasonal, or give fun twists to traditional recipes. These recipes are always so fun to make because I try to get creative with them AND address your needs like getting dinner on the table quickly, packing in veggies, prioritizing protein, and of course having a go-to delicious recipe to rely on. I’m on such a butternut squash kick right now (it’s my fave fall veggie) and today’s recipe has only backed up my obsession.

The primary components you’re going to need are:

  • butternut squash

  • rotisserie chicken (or black beans for a plant-based option)

  • yellow onion

  • red bell pepper

  • cheddar cheese or dairy-free cheese

  • tortillas of choice

These are perfect for a fall spin on taco Tuesday, or make it for a Sunday football party with some dips and sauces (think sour cream, guac, salsa)!
