Happy Friday and welcome to the 100th(!!!) edition of the eat goood newsletter! I kicked off this newsletter almost a year ago now back in January, admittedly a little unsure of myself and questioning what all of you would think of coming to join me on a new platform. Quickly, you showed up for me and supported my work, and for that I am forever grateful ❤️ Creating this Substack pushed me to be a better recipe developer and content creator, so thanks for sticking with me as I built out our weekly structure and made lots of iterations along the way. Your asks and suggestions have consistently inspired me to dig deeper and provide more value wherever I can, and I truly CANNOT wait to share all of the exciting updates coming in 2025.

Today’s newsletter includes our December subscriber exclusive recipe, which I created with both the holidays and the start to the new year in mind. This rosemary citrus spatchcock chicken can be an easy yet impressive dish to serve for holiday celebrations over the next week OR can be used as some meal prep for the week following your holiday plans, which is exactly what I did this week! Roast your chicken and veggies, make your sauce, store everything separately, and enjoy during the week as is or in the form of grain bowls.

Chicken leftovers also make for the perfect addition to cozy soups, chicken salad, tacos, wraps, and more (ideas included in the post). And if you haven’t spatchcocked a chicken before, I have instructions + a video to show you how to do it!

My favorite part is probably the roasted lemon pan sauce that you can quickly whip up with the drippings from your sheet pan, but if you’re short on time or want something simple, you can leave it out.
