I have a serious aversion to meat on the bone. Yes, I know it’s weird. Is there a way to make this with chicken breasts that you would recommend?

Hi Kelly! you could coat chicken breasts in the spice mix and oil and start by roasting only the veggies for about 20min, then add the chicken breasts to the pan and continue to bake for about another 20 min, depending on the thickness of the chicken, until 165F! Just be mindful of bake time as the breast may dry out quicker at a higher oven temp :)
