Welcome back to The Round Up, it’s time to review the month! The fact that May is already over is crazy to me. I started it off in beautiful Austin, TX with Siete Foods where I was able to take a few days to enjoy the sunshine and meet some amazing people. Then it was back to work—tons of recipes to test, videos to film, newsletters to write, and things to get done for the massive project I’ve been not so secretly hinting at the past few weeks… that all went by in the blink of an eye.
It was also my birthday this month 🎈I celebrated 28 by spending the day in Boston and going to some favorite spots with Brian: Verveine Bakery for GF goodies, Beacon Hill Books for browsing cookbooks, Gus & Ruby Letterpress and Kured for shopping and munching on Newbury Street, lots of Copley & Cashew time, Faccia a Faccia for a special dinner and GF tiramisu, and even the opening of the Union Square Farmers Market! My ideal b-day.
Although quick, it was a great month and one I’ll really treasure. On The Round Up in May we dove into re-heatable and repeatable meals, basically proving that leftovers can taste just as good!! We also perfected our bowl formula because they’re the key to a yummy meal, and we rounded out the month with controversial(?) lettuce-free salads, keeping all the good stuff in there. We had four brand new YouTube videos (including the massive freezer meal prep for my big sis who’s now a new mom), our May meal prep plan, a real hit of a bonus recipe 🌽, a new ingredient prep guide, and of course some new meal plans. I’d say we were eating goood!

One-Pan Street Corn Inspired Chicken and Rice — I’m so excited you guys are loving this one pan meal as much as I do!! It has a little kick (adjustable to your taste) and all around a totally not-boring way to eat chicken and rice!
Lemon Chia Pudding — Citrus is one of my favorite chia pudding flavors, this one is punchy and fresh. Chia pudding is so good for a breakfast or snack, and this one is loaded with both fiber and protein.
Vegan Cherry Tomato “Vodka” Sauce — May have stirred up some controversy with this one in the IG comments, but I stand by this delicious, creamy, dairy-(and vodka-) free sauce. Easy swaps provided if you don’t need dairy-free!!
Sticky Honey Glazed Salmon with Fresh Peach Salsa — This one is the ultimate summer meal imo, and I cannot stop making it. It’s one of those that looks and tastes fancy, but it really doesn’t take long at all to prep and cook. Already made 3x in May!!

wow it was a busy month…
what I did & loved

Fancy iced coffee at home — I’m really not one to gatekeep good things, but I was so tempted to keep this one to myself given that it’s become nearly impossible to track down the Chobani Cookie Dough Creamer. This at-home cold foam and iced coffee has become an obsession, I genuinely go to bed excited to wake up at make this coffee each morning (whatever gets you through right?) Use your preferred cold brew coffee, I’m partial to Stok (unsweetened!). These glasses are the perfect size to enjoy it in and I can’t get enough.
Movement routine — I’m officially signed up for my next half marathon! I can’t believe I’m going to be doing it again, but I’m so excited. To support my training, my movement routine got a little revamp the past few months. I’ve been using the Moves App for strength training and highly highly rec if you’re at any level of fitness, it’s so approachable and there’s really something for everyone in it. I’ve also been loving cycling classes and honestly, just walking!
Farmer’s Market trips — This is one of my favorite parts of spring and summer time! Brian and I made it to our first market of the season in May and it felt like a true seasonal milestone! The produce is still very early season, I’m so looking forward to all the leafy greens and color veg and of course tomato szn. One of my fave ways to use that produce is in pasta salads, I’ve been testing out new recipes BTS for ya, can’t wait to share so soon!!
Summer clothes — Now that we’ve had two days in a row of sun, I’ve officially broken out the summer clothes. I filled a few gaps in my closet with this exercise dress, this stunning pink maxi (wore to a wedding this past weekend!!), and added a new bag to my rotation. Some more summer picks here.
Versed skincare & makeup — It’s no secret Versed is a favorite of mine… I think I’ve featured them every month in some way 😂 But I truly do use these products every single day and love how great they make my skin feel. Clean beauty faves this month had to be the Stay Liquid Eyeshadow and Soft Gloss Tinted Lip Serum because they easily elevate your makeup in just a few seconds. And of course my most used Day Dissolve, plus this sunscreen. They recently launched the makeup line and it’s completely taken over my 5-min makeup routine. Shop all my picks!
