There’s a point every summer when my fridge becomes my favorite kitchen appliance. The stove? Don’t know her. The oven? Haven’t made eye contact in weeks. All I want is something cold, ready, and ideally waiting for me the second I wake up. Bonus points if I can eat it standing over the sink in my pajamas.
If you’re feeling the same, this week’s roundup is for you: six no-bake breakfast recipes to keep things easy, cool, and actually enjoyable in the morning. All of which can be prepped in 20 minutes or less. I’m a firm believer that even five minutes of prep on a Sunday (or honestly, any random evening) can completely change how your week feels. It’s one less decision to make, and you’ll always have something ready to grab.
If you’re new to prepping breakfast, start with one recipe and double it—it’s the easiest way to get a few extra meals in the fridge without extra work—and don’t overthink flavor combos. Most of these are super flexible and forgiving. And if you need to get equipped, I also added my meal prep faves that are on sale for Prime Day below today’s recipes, like glass containers, mixing bowls with lids, and silicone trays.

The Round Up: no-bake breakfasts
Since I know you’ll ask, these are the 12oz jars I use for chia pudding and overnight oats! They’re cute, dishwasher safe, non-toxic, and the bamboo lids haven’t cracked on me in years.
Blueberry Milk Chia Pudding — I can’t stop thinking about the color of this new Blueberry Milk Chia pudding. And just in time for blueberry season to start! You can use fresh or frozen to create the delicious and sweet compote (but honestly I prefer frozen). Perfect to take on-the-go for busy weekends or as a snack to relax with outside in warmer weather. I just made lattes with leftover compote this week—the perfect complement to this breakfast.
Lemon Chia Pudding — This chia variation is bright, super creamy, and packed with citrusy flavor. Lemon is personally one of my favorite flavors an it really is the star here—the ideal (almost) summer flavor. This recipe gives you the measurements for each jar, add these measurements to each jar you make for the week! Browse allll the chia recipes here.
Peanut Butter Banana Smoothie — This easy green peanut butter banana smoothie gives a milkshake-like taste despite having your greens in there. You just need a few simple ingredients to throw this one together and start your day with satisfying protein and fiber. Prep ahead and store everything aside from the liquid in freezer bags, then just dump into your blender, add milk, and blend! My favorite freezer-friendly bags for smoothie prep.
Matcha Latte Overnight Chia Oats — I will take any excuse to make my breakfast as colorful as possible, matcha overnight oats always steal the show. These overnight oats are fun, fresh, and so satisfying. Plus, you get caffeine, antioxidants, and a protein and fiber-packed breakfast all in one. If you’re not a matcha fan, you can omit and make them vanilla instead.
Chocolate Strawberry Overnight Oats — These quickly became a favorite earlier this year in our monthly meal prep plan and I completely understand why. I can’t wait to re-make with fresh in-season berries!! Nothing beats chocolate for breakfast either…
Peanut Butter Cookie Dough Protein Bars — I love to have bars on hand for an easy protein fix between meals or to grab in the morning, but prices for individual protein bars has low-key gotten out of hand!! These PB protein bars are my take on the Perfect Bar at home using minimal ingredients (you probably have most of them on hand already!) and barely any prep time. try ‘em out this week if you have the time so you can skip the packaged version.
Meal Prep Essentials
