Happy Sunday! This week’s newsletter features another Sunday meal prep, because January is all about meal prep IMO. I have three recipes to share with you—one breakfast and two lunches (or dinners)—to help make your week just a little bit easier. My goal with this week was to keep it simple with a prep plan that doesn’t leave you overwhelmed—and to help keep your meal prep goals sustainable. To keep it simple, each recipe takes 20 minutes or less of prep time! They’re also packed with seasonal produce (just like our first meal prep of Jan) and bold, vibrant flavors to keep things interesting! 🍯 🍅🍠

To further maximize your time, I recommend prepping one recipe while a second is cooking—start with the sheet pan: with the longest cook time, you’ll be able to prep muffins and press the tofu while it’s in the oven—talk about efficiency 😮💨

When the scrambled eggs start tasting a little too much like eggs, swap for these savory breakfast muffins! If you’re a fan of my breakfast biscuits and egg muffins, these are like a happy medium—still protein and veggie packed, but such a fun way to mix up your morning & seriously so easy to make ahead. Perfect for stocking the freezer!

spiced veggie and turkey meatball sheet pan with yogurt sauce
serves 4 | prep time: 20 min | cook time: 40 min
Nothing beats a sheet pan meal prep! I love to do meatballs on a sheet pan, they cook up so quick. This variation leans on the spices to elevate it, plus the cooling and tart, yogurt sauce offers the perfect balance. So easy to swap out the ground meat in this for beef or chicken if you prefer that & add in extra veggies you have on hand.

honey garlic tofu with coconut rice
serves 4 | prep time: 30 min | cook time: 35 min
If you loved the maple cider tofu from my last grocery series, I know you’re going to love this sweet and savory one! To cut down on time you can serve over regular rice but I really encourage you to make the coconut rice—I’ll even go as far to say that you’ll never want to eat your rice another way again!! It’s so so creamy.

I have prepped the jalapeño cheddar biscuits and like everyone else they have a choke hold on me! Will most definitely be keeping these in rotation!
