If youāve been a longtime follower of mine, you know my breakfast biscuits are my literal pride and joy. They were one of my first recipes to go viral on social media, so they hold a special place in my heart. Seeing my IG story tags every Sunday filled with breakfast biscuit pics brings me SO much joy (keep āem coming!). I love coming up with new recipe variations that hit all the different flavor profilesāsweet, spicy, savoryāand some fun variations like pizza and everything bagel inspired. If you havenāt tried them out yet, let this be your week because Iāve got a new flavor combo for you. This specific variation has about 15g of protein per biscuit. A dream!!
For the past few monthās Iāve had āNew Breakfast Biscuit Recipeā sitting in my recipe ideas note, and after the love on this video, I knew it was time to get to developing. The biscuits originally became a meal prep staple of mine because they reminded me of my favorite cheddar and chive scones, so thatās how my newest variationāCheddar and Chiveācame to be. The prep. The first step in all my breakfast biscuit recipes involves browning the vegetables and meat (if using). For this recipe, weāre using ground chicken and onions to keep it simple. The key here is to fully cook it all, add your spices in, then drain the excess liquidādepending on the type you use, there can be quite a bit left over so itās key to discard.
The wet ingredients. Both the protein and liquid in this recipe comes from the eggs. I always get asked if these are eggy-tasting, and honestly no! Weāre using 1/2 dozen for 12-14 biscuits, so itās different from an egg muffin. At this point half the cheddar will get mixed in, this helps keep things moist while baking, and adds a cheesy flavor.
The dough should be wet-ish and able to hold its shape. Make sure you get all the way under and around the bowl to make sure the wet and dry ingredients are truly incorporated. Sheās ready to scoop now!!
To finish it off, weāre adding a generous sprinkle of cheddar cheese to the top of each biscuit. This is what really drives home that subtly sweet flavor. Cabot cheddar is superior imo, if you donāt mind the extra work of shredding it yourself! Give your biscuits some room to breathe on the pan, but they donāt spread a ton while baking.
Cheddar and Chive Breakfast Biscuits
makes 12 biscuits | prep time: 15 minutes | cook time: 25 minutes
INGREDIENTS
1 1ā2 tablespoons avocado or olive oil
1 medium yellow onion, diced
16 ounces ground chicken
2 teaspoons garlic powder
2 teaspoons kosher salt
1ā2 teaspoon ground black pepper
1ā2 teaspoon dried sage
6 eggs
1 1ā2 cups shredded cheddar cheese, divided (can sub dairy-free cheese)
1ā3 cup finely diced chives
1 1ā2 cups blanched almond flour
1ā3 cup coconut flour
2 teaspoons baking powder
INSTRUCTIONS
Preheat oven to 400F and line a baking sheet with parchment paper.
Heat the oil in a skillet over medium heat, then add the onion and cook for 5 to 7 minutes, stirring occasionally, until translucent.
Clear the center of the pan and add in the ground chicken. Cook, stirring constantly, until the chicken is cooked through, 7 to 10 minutes. Add the garlic powder, salt, pepper, and dried sage. Stir to combine, drain any excess liquid (if needed), and set aside to cool for 5 to 10 minutes.
Whisk the eggs in a large mixing bowl, then incorporate 1 cup of the cheddar cheese, the cooled chicken and onion mixture, and the chives. Use a spatula to mix.
Add the almond flour, coconut flour, and baking powder bowl and mix until just combined.
Use a large cookie scoop or spoon to make 12-14 evenly sized balls of mix and place them on the baking sheet. Rub a little bit of oil in your hands and shape each into a biscuit shape by pressing down lightly on the tops. Cover the tops of each with the remaining 1/2 cup of cheddar cheese.
Bake for 13 to 16 minutes, until the biscuits are firm and starting to brown on the outside. Remove from the oven and cool completely on the baking sheet.
