Chia pudding was one of the first recipes that made me actually excited about meal prep. It checks all the boxes: high fiber, endlessly customizable, and somehow tastes better the longer it sits in the fridge. Plus, no baking required!! I will forever say that if you prep just one meal ahead for your week, breakfast is a great place to start. Chia pudding comes together in minutes so even on busy weeks, you can probably fit it in. I’ve made countless variations of these no-bake beauties over the years, and today I’m so excited to share three brand new variations you can try out to switch things up.

Lemon Chia Pudding
makes 1 jar | prep time: 10 min | chill time: 6+ hours
This variation is bright, super creamy, and packed with citrusy flavor. Lemon is personally one of my favorite flavors an it really is the star here—the ideal (almost) summer flavor. This recipe gives you the measurements for each jar, add these measurements to each jar you make for the week.

Berry Vanilla Chia Pudding
makes 1 jar | prep time: 10 min | chill time: 6+ hours
You know I love an easy prep, so this variation uses frozen berries, no prep required! The vanilla comes from both vanilla extract and protein powder, it gives summer-dessert vibes that feels a little fancy without trying too hard. This recipe gives you the measurements for each jar, add these measurements to each jar you make for the week.

Chocolate Banana Bread Chia Pudding

I’m actually not sure I need to convince you to try out this flavor. It’s treading that line between breakfast and dessert, which we just need sometimes. We’re still packing in nutrients thanks to the chia, protein powder, and banana. This recipe gives you the measurements for each jar, add these measurements to each jar you make for the week.

My Chia Pudding Top Tips



🌀 Mix it well — I cannot stress this enough, and you’ll always see it in the recipe instructions. If you don’t mix everything well enough, ensuring that there’s minimal settlement on the bottom of the jar, the pudding will not set properly. Using a small whisk or small silicone spatula will do the trick, and mix it a few more times than you think you need to, it’s not possible to over mix here.
⏱️ Let it set — It is key to let chia pudding set completely. It needs at least 6 hours to fully set, and gets better if it can set overnight (8+ hours). You’ll keep it refrigerated until you’re ready to enjoy anyways! This also makes the chia easier to digest.
🫙 Texture — If the texture is keeping you from trying it, there’s a few things you can do! First, try blending everything, including the chia seeds, before setting. It takes a bit for them to break down, but once they do, the texture is much more pudding like, without the seeds. Alternatively, you can add Greek yogurt (or dairy-free) to make it thicker, which helps the texture! If the recipe doesn’t call for it, just add in 1/2 cup and reduce the amount of milk to 1/4 cup, or you can always add it on as a topping.
🍯 Toppings — This is where you have space to play and make these your own! I typically pull from the flavors in the chia pudding, like cinnamon, honey, cacao nibs, and sliced fruits. I go through all my topping selections in today’s Youtube video!

let’s talk morning routines! Over the past few years I’ve transitioned all of my beauty items to cleaner products and it’s made a big difference.
