marry me shrimp spaghetti
this month's bonus recipe (plus dessert š«) for your Valentine's menu!
Happy Friday everyone! This week Iām excited to share our February bonus recipe. Weāre leaning into Valentineās Day vibes with something a little fancier, but keeping ingredients simple so it still feels easy to pull off š While I had Valentineās dinner in mind when making this one, itās also perfect for your Galentineās celebrations or to just mix up your usual dinner rotation! This monthās recipe is a rich, creamy, flavor-packed Marry Me Shrimp Spaghetti, which also happens to be gluten and dairy-free.
This meal comes together quickly in a skillet, keeping things easy breezy, and can be customized to your liking. The spaghetti is the perfect base for our herby-sun-dried-tomatoey-sauce (very technical culinary terms there, make sure to write that one down) and the seasoned shrimp is an ideal protein to top it off. If youāre not a seafood fan, donāt worry Iāve got you covered with loads of subs and swapsāLots of easy modifications for this one. Want to opt for another pasta shape? You can do that too!
And of course no special dinner would be complete without dessert, so Iām also including the recipe for my favorite gluten-free chocolate chip cookie skillet in this post as a not-so-subtle push to get you to add it to the menu. Perfect to serve 2-4 people, but itās so goood I wonāt judge if you decide to save it all for yourself š
Before we dive into the recipe detailsāIāve been absolutely loving seeing all of you share what youāve been cooking and prepping from our February meal plan so far! If youāre following the calendar, check out the February Meal Prep section below with all the deets for next week.
Weāre also closing in on 100,000 subscribers (what!!!?) and Iām going to do a fun giveaway when we get there š Consider this your official permission to forward this recipe to a friend (or your Valentineā¦) to show them what the newsletter is all about and encourage them to subscribe for more! Thanks for helping me spread the word š«¶
