Happy Friday everyone! This week I’m excited to share our February bonus recipe. We’re leaning into Valentine’s Day vibes with something a little fancier, but keeping ingredients simple so it still feels easy to pull off šŸ’• While I had Valentine’s dinner in mind when making this one, it’s also perfect for your Galentine’s celebrations or to just mix up your usual dinner rotation! This month’s recipe is a rich, creamy, flavor-packed Marry Me Shrimp Spaghetti, which also happens to be gluten and dairy-free.

This meal comes together quickly in a skillet, keeping things easy breezy, and can be customized to your liking. The spaghetti is the perfect base for our herby-sun-dried-tomatoey-sauce (very technical culinary terms there, make sure to write that one down) and the seasoned shrimp is an ideal protein to top it off. If you’re not a seafood fan, don’t worry I’ve got you covered with loads of subs and swaps—Lots of easy modifications for this one. Want to opt for another pasta shape? You can do that too!

And of course no special dinner would be complete without dessert, so I’m also including the recipe for my favorite gluten-free chocolate chip cookie skillet in this post as a not-so-subtle push to get you to add it to the menu. Perfect to serve 2-4 people, but it’s so goood I won’t judge if you decide to save it all for yourself šŸ˜‰

The main components you’re going to need for this week’s recipe are:

  • shrimp — so excited to use some seafood this month! I always go for frozen.

  • brown rice spaghetti or linguine — one of the best GF spaghettis, imo

  • sun-dried tomatoes — gives a pop of flavor and color + that ā€œmarry meā€ flavor

  • full-fat coconut milk — would it be one of my recipes without? swaps provided šŸ˜‰

  • baby spinach — gotta get some green veg in there

  • basil & oregano — these mesh so well with the sun-dried tomato & coconut milk
